Since it seems like we are always sponsoring events to raise money,
Sandra, Betsy, Andrea and I thought it might be nice to give you a
mid-year financial report on the LSO. Even though this is only mid year
the cookbook was our last major moneymaking project for this year. Now
_ we plan to sit back and spent it on the major LSO activities (the picnic
is our first one). This is a fairly accurate accounting. The cookbook
finances are still being calculated and we will have an exact accounting
when the last of the books are delivered. Anyway this will give you an
idea of where the money came from and where it is going. Once again
thanks for your support. Your dues have enabled us to generate
additional income and, we hope, plan some good events.

we have approximately $A5 in binding expenses for the cookbook that is
committed out of that money. We expect to spend about $150 on the
picnic (perhaps more, unlikely less) so that money is not a huge amount
but enough, I think, to enable us to have some nice activities. After
the picnic we will still have the Christmas party and possibly the LSO
, silver jubilee to plan. Thank you to all of you who have joined and _
those of you who have supported us in other ways. We hope to make this
the most successful year ever for LSO.

 COOK'S CORNER
x When one accepts the honor of the office of an organization, one
gets into some strange situations. In my case it has been testing the
recipes of the KENTUCKY SAMPLER. This may not seem so strange to most of
you but it is for me because l. I cook maybe twice a week 2. I am
married to the worlds pickiest eater who has to be strongarmed into
trying new foods (who, me? DP). Nevertheless I have been systematically
trying recipes from the KENTUCKY SAMPLER and I have come up with the
following rating system.
**** Both of us liked it and it will be made again
*** One of us liked it and it will be made again (depending on which
one of us liked it)
** Neither of us liked it but we ate it
* Neither of us liked it but one of us (it wasn't me) would not eat
it
OO The dog wouldnlt eat it
Listed below are the recipes I have tried thus far with my comments.
· WATERGATE SALAD *** (page 8 of the KENTUCKY SAMPLER)
I needed something simple, fast, and good to take to the tasting
party. This salad fit the bill in all respects. I loved it but Dave
did not know what a pistachio was so he wouldn't look at it. (A what?
dp)
MEAT AND CHEESE LOAF **** (page 28 of the KENTUCKY SAMPLER)
I modified this recipe slightly by leaving out the green pepper and
celery salt (one of us in the family will not eat anything with these
ingredients in it). I used Velveeta Cheese and cut the recipe in half
for one loaf instead of two. I used a microwave oven and microwaved the
loaf on 50% power for 36 minutes. The result was a delicious meat loaf
but the cheese was melted a bit more than I liked it. Next time I think
I will try cheddar.
ANGEL BISCUITS **** (page 58 of the KENTUCKY SAMPLER)
This recipe is great because the dough keeps in the refrigerator for
2 weeks. I think I may have mismeasured the Buttermilk because the
dough seemed to be a bit sloppy. However I compensated by adding ` I
additional flour before I rolled out the biscuits each time. The result g
was fresh biscuits with each meal with a flavor that was out of this ‘
world. T
h CROCKPOT STEW *** (page S20 of the KENTUCKY SAMPLER II) E
This recipe only gets a 3 star rating because Dave had a cold when I g
sprung it on him. I enjoyed it but he could not taste it so I guess ¤
I'll fix it again when he can taste.
SQUASH QUICHE *** (page S27 of the KENTUCKY SAMPLER II)
Since I am the only one in the family who eats squash this gets 3
stars. I added some mushrooms and used cheddar and mozzarella cheese
(Dave called it a garbage quiche because I cleaned out the
refrigerator). Remember that there is an error in the ingredients.
2

There is 1/2 c. Bisquick and 2 c. milk. I found this very good for a
fast breakfast.
These are the recipes I have tested so far. I would appreciate it
if any of you would pass along what you found when you've tried some of
the recipes. I haven't tried any of the desserts because both of us are
too fat.(WHO???) Maybe some of you would share your opinions on the
desserts.

TERRY WARTH from Special Collections attended the 2 day Ohio Valley
Technical Group meeting at the Hyatt Regency which took place on May
9-1O and the UK sponsored AACR Il workshop May 29-30. Terry will be
attending ALA in New York City from June 29 to July A.
FRANK STANGER of the Special Collections Archivers attended the eleventh

Western Reserve University. The Workshop was held in Cleveland from
June 15-20.
BILL MARSHALL is chairperson of the Kentucky Council on Archives
Disaster and Emergency Task Force in Frankfort. This group meets to
discuss the ways of handling various emergencies that may arise in

MARY MARGARET BELL and BILL MARSHALL were speakers at the Colonial Dames
State Convention held at Spindletop this past month.
MICKEY OWEN, former baseball star for the Dodgers and the Cubs, was
interviewed by BILL MARSHALL in Springfield, Missouri last month. Mr.
Owen is running for lieutenant—governor of Missouri and currently is
sheriff of Springfield. ·
The AGRICULTURE LIBRARY completed its biennial inventory on May 22nd and
23rd. Seven people inventoried approximately 75,000 volumes in 2 days.
The NORTH AMERICAN INDIAN EXHIBIT which has been on display in the
Special Collections has been very popular and received an excellent
notice in AB Antiquarian Bookman, May 26, 1980 p. n086.
COFFEE CANS ANYONE? I hate to waste anything so I now have about a
dozen 3 lb. coffee cans in my office behind my desk. Since they are
ready to fall over I would be glad to give any or all of them to anyone
who would like to have them. Call me at 258-2758 as soon as possible.

heads to allow those people attendingvthe picnic to leave at 3:30 p.m.
This is totally at the discretion of the unit head. All units must be

Anyone wishing to leave early must have the approval of their unit head.
D0n't forget the signup sheet in last week's GREEN BEAN. To have a
successful picnic we need the necessary information as soon as
possible!
The monthly LSO LUNCH HOUR PROGRAM for July will be on July 23rd. The
program is tentatively set. Maureen O'Brien and Gerry Munoff of the
Photographic Archives will present a program on photographic
preservation. It should be an excellent presentation so plan to be
there!
The KENTUCKY SAMPLER sales have finally concluded. If you put off
buying your KENTUCKY SAMPLER it's too late now. I guess you’ll have to
wait until next year. Those of you who ordered your sampler in the last
batch should have them in the next few weeks. It all depends on how
fast I can get them cut and collated. Thank you for your orders. I was
surprised at the number we sold.
